- Bring a large pot of salted water to a boil. Cook pasta until al dente, then drain.
- Heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 30 seconds.
- Add chopped tomatoes, salt, and pepper. Cook until softened and saucy, about 8–10 minutes. Add sugar if needed.
- Toss in the cooked pasta and stir to coat evenly.
- Remove from heat, stir in mozzarella and basil, drizzle with more olive oil, and serve warm.
