Mediterranean Flatbread Pizza

Ingredients
  

For the Flatbread:
  • 2 naan or pita flatbreads
  • Olive oil for brushing
For the Sauce:
  • 1/3 cup hummus
  • 1 tbsp olive oil
  • Juice of 1/2 lemon
  • Salt and pepper to taste
Toppings:
  • 1/2 cup cherry tomatoes halved
  • 1/3 cup Kalamata olives sliced
  • 1/4 cup red onion thinly sliced
  • 1/2 cup crumbled feta
  • 1 cup baby spinach or arugula
Optional Add-ons:
  • Artichoke hearts roasted peppers, or grilled chicken
  • Drizzle of balsamic glaze or extra olive oil

Method
 

  1. Preheat oven to 425°F. Place flatbreads on a baking sheet and brush lightly with olive oil.
  2. Bake for 3 minutes to crisp slightly.
  3. In a small bowl, mix hummus, olive oil, lemon juice, salt, and pepper.
  4. Spread sauce over each flatbread, then top with tomatoes, olives, onion, feta, and greens.
  5. Bake 8–10 minutes, until edges are crisp and cheese is lightly golden.
  6. Drizzle with olive oil or balsamic glaze before serving.
