Ingredients
  

  • lb chicken breast or thighs sliced into thin strips
  • 3 bell peppers any colors, sliced
  • 1 large red onion sliced
  • 3 tbsp olive oil
  • tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp cayenne optional
  • ½ lime for squeezing
  • Fresh cilantro for garnish
  • Flour or corn tortillas for serving

Method
 

  1. Preheat oven to 425°F (220°C) and line a sheet pan with parchment.
  2. In a large bowl, toss chicken, peppers, and onion with olive oil and all the spices.
  3. Spread in a single layer on the pan.
  4. Roast for 20–25 minutes, tossing halfway, until chicken is golden and veggies are slightly charred.
  5. Squeeze lime juice over everything and sprinkle with cilantro.
  6. Serve hot with warm tortillas and your favorite toppings.
