Method
- Boil pasta in salted water until tender. Reserve ½ cup of pasta water and drain.
- In a saucepan, melt butter over medium heat. Add flour and whisk for 1 minute.
- Slowly pour in milk, whisking continuously until smooth and thickened.
- Stir in salt, pepper, and nutmeg.
- Add cheese and whisk until melted and creamy.
- Toss in pasta (and veggies, if using). Add a splash of pasta water to reach desired consistency.
- Serve hot, topped with extra cheese and black pepper.
